Raw Vegan Packed Lunch

Not pictured: a delicious homemade dressing!

This one's pretty easy to do. You can make a few of these early in the week and save them for each day, meal-prep style, or throw these together in the mornings (if you have the time). The above recipe goes as follows...

Recipe: Raw Vegan Packed Lunch

Ingredients:

  • 1 zucchini, spiralized
  • 1 - 2 carrots, shredded
  • 3 -5 cherry tomatoes
  • 1 tbsp sunflower seeds
  • Dressing of your choice

STEP ONE: Take your zucchini (or yellow squash, beets, butternut squash, etc.) and run it through your spiralizer. Place in your tupperware or glass container.

STEP TWO: Shred your carrots or chop finely. Add to your lunch container.

STEP THREE: Add the rest of the ingredients and pack tightly into the container, making sure not to press too hard on the tomatoes. When it looks full to the brim (but not overflowing!) you can seal your meal.

STEP FOUR: Pour your dressing into a separate cup or jar. I like my zucchini noodles to be firm, not weak, so I like to bring the dressing along with me to pour it on later. If you like your noodles a little more loose and noodle-y, feel free to pour the dressing straight into your salad container.

 

Pro tip: If you don't have a spiralizer at home, you can buy zucchini noodles that are pre-made. Same goes for shredded carrots!
