Quick & Raw White Corn Salad

This is a recipe I came up with while doing a raw vegan cleanse a few years ago. It's perfect for the summer, but just as tasty during the rest of the year, too! 

Quick & Raw White Corn Salad

Serves 2.


  • 2-3 ears of white corn
  • 1 carrot, shaved
  • 3-5 cherry tomatoes
  • 1-2 scallions, chopped
  • 1/2 cup basil
  • 2 tbps lime juice
  • 1 tsp apple cider vinegar
  • salt and pepper to taste

With a serrated knife, hold ear corn in a  mixing bowl and cut downward. Repeat for each ear of corn. Next, chop 3-5 cherry tomatoes and toss into bowl. Next add shaved carrot and chopped basil into bowl and mix with lime juice and vinegar of your choice. Sprinkle pepper, pink himilayan salt, and any other spice you like into the bowl and mix. Serve in two small bowls.

Note: Measurements aren’t exact because you should as much or as little of the ingredients you love most (or just happen to have in your fridge). In retrospect, a tablespoon of hemp seeds would give a big boost of protein!
