Avocado, Radish, and Cucumber Salad

This recipe can be eaten alone as a salad, presented as a side dish, or doubled (or tripled!) for a larger group of people. For variations, try adding lime juice, paprika, and/or basil.


  • 6 radishes
  • 1 large cucumber
  • 1 avocado
  • 1 tsp of olive oil
  • 1/2 red onion or minced shallots
  • 1 garlic clove (or 1 tsp of powdered garlic)
  • 1 tbsp. of parsley (fresh if possible)
  • salt and pepper to taste


Chop the cucumber, radish, avocado, and parsley and set aside. Begin to make the dressing by mincing shallots and/or finely chop the red onion. Then mix with olive oil, garlic, salt, and pepper. Add everything into one bowl and toss until dressing evenly coats the salad. Enjoy!
